There are some restaurants that serve lasagna noodles with gluten free attribute, but it will be quite difficult to find one. The only thing contains wheat in lasagna noodles is the lasagna pasta. Therefore, if we want to make gluten free lasagna noodles, then the only thing we have to replace is the lasagna pasta. A good alternative for wheat flour that is usually used for lasagna pasta is fours from soy, amaranth, teff, besan and some others.
Gluten Free Lasagna Noodles Making Process
For gluten free lasagna noodles, we need to prepare three cups of amaranth flour. If we prefer besan flour, then we can use about 2.5 cup of the flour. Mount it on a large bowl or table counter and make about three-inch hole with our finger. After that, we can add a tablespoon of veggie broth or chicken stock. If we are using besan, then we can add rice milk or milk. After that, we can add a cup of the unsweetened applesauce, a tablespoon of sesame oil or sunflower oil, then ix it until it becomes a soft dough. Knead the dough for about three minutes and leave it for about couple minutes until everything is well mixed.
Prepare a poly cutting sheet and dust it with flour. Roll the dough carefully and make sure that it has about 1/8 inch thickness. Examine the dough regularly until you get the desired thickness, while you can boil 2QST of vegetable broth or chicken stock.
